Mike Mills had a distinctive backup voice that was perfect for REM. His nerdy sounding counter-melody to Michael Stipe's lead melody during the chorus of Fall On Me is epic.

Do the Spock's Beard guys count?  They pretty much all sing when they do those Gentle-Giant-style vocal harmonies.  Really good tunes.

One could say that Jerry Cantrell was the backup singer for most Alice in Chains, at least while Layne was alive.

 

In that case, he'd be the best one I can think of.

The background vocals/noises on Rock Lobster are pretty wild and amazing.
