Among those bands you listed Nightwish is (by far) my favorite with singer Floor Janzen being nothing short of phenomenal.  She has a much more "metal" voice than Tarja or Annette and her stage presence is mesmerizing.  Also a huge fan of Kamelot and have seen them live quite a few times.  I've been a fan of Symphony X and Savatage for several years and own all their releases.  More recently I got into Sabaton, who are fantastic live but become a little one dimensional on their recordings.  I still like them though.  Blind Guardian do nothing for me which I chalk up to the crazy drum beats they use and the timbre of the singer's voice.  Just not my cup of tea.

Not "power metal", per se, but the new Melechesh album - "Enki" is really good.

It's interesting how right he is about this. All you need to know to write and perform speed metal can be taught in under 2 minutes.

 

A comprehensive punk lesson should take about 30 seconds. (15 if you're a quick study.)

The song he's doing here really isn't hipster, imo. Sounds more like Coldplay cum '80s new romantic and the melody is too interesting and singing too in tune.
